This is just a brief Geography introduction to illustrate the beautiful country from which my mother immigrated, and now cooks delicious dishes from her native town, Quayaquil, which I'm proud to share ♥ Please feel free to try any and all of my mother's recipes :)
As years have progressed, so has my mom's cooking. Slowly over time, she's incorporated American flavors into her Ecuadorian dishes, giving each dish a unique, exotic, and decadent taste. Many people I've come across are unfamiliar with the country of Ecuador, and so, I give you these little maps:
Ecuador is located in South America right smack on the Equator line (hence the name Ecuador).
The Galapagos Island also belongs to the country of Ecuador which is inhabited by the most beautiful animals on this planet.
